P.S. Don't skimp on the chocolate chips!
Four Egg Chocolate Chip Cake
(Serves 4-5)
- 1 cup shortening
- 2 cups sugar (we recommend eSutras Organic Cane Juice Sugar)
- 4 eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 3/4 cups milk
- 1 cup of Cocoa Cravings Semi-Sweet Vegan Chocolate Chips
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 x 13 inch pan.
- Cream together shortening and sugar. Beat in eggs and vanilla.
- In a separate bowl, combine flour, baking powder, and salt. Add to creamed mixture alternately with milk. Mix well. Pour batter into prepared pan.
- Bake for 45 minutes, or until cake tests done. Cool.
- Sprinkle chocolate chips liberally over the top and serve!
